Nose to tail eating isn't a new concept. In fact, not utilising an animal carcase to its full potential is a modern phenomena that only emerged reasonably recently. Unfortunately waste is commonplace within the industrial meat processing industry and this is just one of the problems that Provenir is on a mission to change. What are the benefits of bone broth?
Bone broth has become very popular in recent times and for good reason. When made correctly (to extract the maximum mineral and nutrient content from grass-fed beef bones) bone broth is a nutritional powerhouse and true superfood. The nutrients in beef broth are beneficial for the health of skin, joints and the digestive system and promote overall health and wellbeing.
Bone broth contains calcium, magnesium, potassium and phosphorus, vitamin A and minerals like zinc, iron, boron, manganese and selenium. However, perhaps the most talked about nutrient in beef broth is collagen. The bones and connective tissues used to make bone broth contain collagen and, when cooked for extended periods of time, this collagen turns into gelatin. This gelatin is filled with amino acids, which form the building blocks of the proteins necessary for effective functioning of the human body.
Two of these amino acids in particular – glucosamine and chondroitin – are often used as a supplement to reduce the symptoms of osteoarthritis and to reduce joint pain. Another of these amino acids – glycine – is also an important nutrient for encouraging restful sleep by assisting to regulate the internal body clock and lower the body's temperature. Glycine also supports the body's production of glutathione, which is a powerful antioxidant.
The nutrients contained in high collagen bone broth are also essential for the development of healthy skin tissue and are recommended as a supplement to improve the softness and suppleness of the skin. This is particularly important as the body ages and the collagen in the skin begins to break down. We won't go so far as to say that bone broth works as an anti-ageing supplement, but a difference to the skin can certainly be noticed when beef broth is consumed as part of a balanced diet. Consuming 300ml of grass fed bone broth has been shown to increase plasma levels of the precursor amino acids glycine and proline that are required to form collagen within the human body.

It is worth noting that the nutritional content of different bone broth products varies substantially depending on the type of bones used. Grass-finished beef has significantly higher levels of many key nutrient contents when compared with grain-fed beef (which accounts for most of the beef available for purchase in Australia). Benefits of bone broth for gut health

The collagen (and gelatin) extracted from the bones can help to repair damage to the gut lining while gelatin aids healthy digestion – once in the digestive tract, gelatine binds with water to support the healthy movement of food through the intestines.

What can you cook with bone broth?
As mentioned in the introduction to this article, pho is one of our favourite ways to enjoy bone broth. The broth lends itself to this light but flavoursome dish and perfectly accompanies the other ingredients and flavours. However, beef broth can be used as a base for any savoury dish that calls for a liquid component – be it a hearty European-style soup, stew or sauce – there is plenty of room for creativity. It has also become very popular to drink broth on its own as a healthy savoury substitute for coffee or tea.
What is the difference between beef bone broth and beef stock?
Essentially, bone broth is a slow-cooked beef bone soup without the solids. Unlike beef stock or regular beef broth, Provenir's Best Broth is made from grass fed beef bones and connective tissues rather than meat. How is beef bone broth made?
While there are many different techniques for creating bone broth, all involve an extended period of cooking. Made using a recipe by chef Christopher Howe, Provenir's grass fed beef bones are gently roasted to create a delicious flavour and are then simmered in water at a medium temperature for 12 hours. During this time, the bone softens and nutrients from both the bone and its marrow are released, leaving a nutritious (and very tasty) liquid. We also add apple cider vinegar to the recipe, which assists to break down the proteins within the bone in order to release the maximum nutritional value from the bones. These nutrients are then captured in the beef broth, along with those contributed by the apple cider vinegar. The flavour from the apple cider vinegar is only very subtle, meaning that the hero flavours of this broth are all about the bone and marrow.
